Zoom Cooking Class with Jennie

We will be baking this week on Zoom Cooking Class with Jennie. Our Chocolate Chip Zucchini Bread is a Red Rabbit twist on a sweet treat – it’s chock full of veggies! We are so excited to share this recipe to you all, so we hope to see you there!

Recommended Ingredients: (As always, do your best to gather everything you can, and if you have any questions about alternatives or substitutions, definitely reach out!)
• 3 eggs
• 1 cup vegetable oil
• 2 cups sugar
• 2 cups zucchini (to be grated)
• 2 teaspoons vanilla
• 3 cups flour
• 1 teaspoon baking soda
• 1 teaspoon salt
• 3 teaspoons cinnamon
• 1/4 teaspoon baking powder
• 1 cup chocolate chips (optional)
• 1 Tablespoon flour
• Non-stick cooking spray
Equipment needed:
• Blender
• Grater
• 2 large mixing bowls
• Measuring spoons/cups
• Rubber spatula
• Mixing spoon
• Loaf pan
• Oven
After the class, we will send out the recipe, in case you need a refresher. And if you are unable to make the class, don’t worry – we are planning to record the class, so you can see the recipe in action whenever works for you!
